I LOVE when dinner takes no time at all to prepare AND is delicious! That’s exactly what this recipe is, quick and so good! All you do is add chicken, taco seasoning and salsa to your slow cooker. That is IT! I wasn’t sure what I would think of this recipe but after one bite I was amazed! It was so full of flavor! The first night we made tacos with the chicken but we had so many leftovers we got creative during the rest of the week. We made taco salad, burritos etc. And we were sad when the leftovers were gone! This is now one of my favorite recipes and we plan on making it once a month!
The chicken is so juicy and flavorful. It goes so well with about anything! I think next time I might add some corn and black beans and serve it over rice.

Tip: shred chicken in a Kitchenaid mixer if you have one (with paddle) Jusy takes a few seconds. It is easy to over-shred so watch well. Just add whole chicken breast and turn on for a few seconds and your done!
I love that tip Mandy! I even posted it on my blog a while back (https://www.lovetobeinthekitchen.com/2012/03/06/how-to-shred-chicken-in-20-seconds/) but it’s not necessary for this recipe because the chicken is so tender it easily shreds with just a fork.
I made something similar to this earlier in the week. It turned out great and we had left over chicken to use in tacos and recipes for the whole week. This recipe is so handy and super easy!
