Reese’s Pieces Cupcakes- Chocolate Cupcakes with peanut butter chips, frosted with a creamy peanut butter frosting and topped with Reese’s Pieces.
My sister-in-law Tana just celebrated her 16th birthday on Halloween. She loves Reese’s Pieces so I thought it’d be fun to surprise her with Reese’s Pieces cupcakes. I ended up finding some great recipes and combined 2 that I found. I was amazed at how wonderful they turned out. They are so good! And Tana loved them so that made me happy. 🙂
3/4 cup cocoa
1/4 tsp. baking soda
2 tsp. baking powder
1/4 tsp. salt
1/4 cup soft butter
1 cup sugar
1/2 cup brown sugar
2 eggs, room temperature
1 tsp. vanilla
1 cup milk, warm
1/2 cup peanut butter chips
Preheat oven to 350ºF. Line 24 muffin tins.
In medium bowl, sift together flour, cocoa, baking soda, baking powder and salt.
In a large bowl, cream together butter and sugars. Beat in eggs one at a time. Add vanilla.
Add flour and milk, alternating in three additions, ending with flour. Stir in peanut butter chips.
Evenly distribute into prepared muffin tins. Bake 15 to 17 minutes or until a toothpick comes out clean or until the cake springs back when lightly pressed. Cool completely on a wire rack.
4 tablespoons of unsalted butter, softened
4 cups powdered sugar
2/3 cups creamy peanut butter
Mix cream cheese and butter until combined. Add in 2 cups of powdered sugar, mix until combined. Add in remaining 2 cups of powdered sugar. Once well combined add in the peanut butter, mix until smooth. Pipe the frosting onto the cupcakes and top with Reese’s Pieces.
Tana loved it!
Okay, I have a question, how old was your sister-in-law when she married your brother, if she’s just turning 16????
I’m not sure what you mean? The sister-in-law in these pictures is 18 now and not married. I have other sister-in-laws.
How is she your sister-in-law, if she isn’t married? Maybe I’m not understanding your post?
My husband has 6 siblings so when we married, they all became my in-laws. So all his brothers became my brother-in-laws and all his sisters became my sister-in-laws. Married or not.
Duh, I was being stupid! 🙂
