Make-Ahead Meal: Frozen Pizza

Frozen PizzaI’m so excited to share this idea with you! I’m sure I’m not the first person to come up with this idea but I think it’s pretty awesome. Derek and I love pizza! So I thought it’d be great to have our own frozen pizzas in the freezer. It does take some time to prepare so find a time when you have a couple of hours. I was able to get most of it done during Levi’s nap.
I made my own pizza dough but I know they sell pizza dough at a lot of places if you want to skip that step.
Pizza Dough
Ingredients
½ cup warm water
2 tablespoons yeast
1 tsp. sugar
2 cups hot water
1 tablespoon salt
¼ cup canola oil
6 cups flour (I used half wheat flour)
(optional add in: 1-2 tablespoons wheat germ)
Directions
Pour ½ cup warm water in a small bowl, add sugar and yeast and wait until yeast is dissolved, about 7-10 minutes. In a big bowl, or stand mixer, combine 2 cups hot water, salt and oil. Add yeast mixer and blend with 6 cups flour. Let rise 30-45 minutes.
Take a small amount of dough and form it into a ball, roll it out with a rolling pin. I like to roll mine out pretty thin. Don’t worry if it’s not a perfect circle, most of mine weren’t. Place 2 of the rolled out pizza dough crusts on pans that have been sprayed with non-stick spray and sprinkled with cornmeal. With a fork poke small holes on the pizza dough to prevent air bubbles in the crust. Bake at 425 for 4-5 minutes or until dough is cooked. Continue until all the dough is cooked.

 

Top with your favorite toppings, I used pizza sauce, cheese (a blend of mozzarella and cheddar), pepperoni and green peppers.
Place 4 pizza crusts on a baking pan, place in freezer until frozen through. Wrap each pizza in plastic wrap and place 3 in a freezer bag and place in freezer. Continue freezing pizza until all are frozen.
When ready to eat, remove pizza and cook. You can cook it in the microwave, toaster oven or oven. I’ve tried it all 3 ways and all are amazing but my favorite was the one cooked in the oven. (If you cook it in the oven I recommend cooking it at 400 F) Enjoy!
