Make-Ahead: Breakfast Burritos

Breakfast Burritos
Derek loves eggs and he also loves having something quick to grab in the mornings to take to work for lunch. So last night we made a lot of breakfast burritos for him (I’m not as crazy about eggs). He grated the cheese and I made the burritos. It was really easy and they taste so good!

I started out by sautéing onions, and red and green peppers. I love the colors. Then I cooked some sausage and then I cooked the eggs, added some green onions and mixed it all together.

Next was assembly time. I spread out the tortillas on the counter top, put a little egg mixture in then sprinkled on some cheese.

Breakfast BurritosLastly, I froze them on a cookie sheet in the freezer then placed them in a freezer bag and they are ready to go!

Make-Ahead Breakfast Burritos


You can put whatever you like in your breakfast burritos but here are some ideas…

Eggs (for sure!)
Vegetables: Onions, red and/or green peppers, green onions jalapeños, mushrooms…
Sausage, chorizo, bacon or ham
Cheese
Flour tortillas

    How do you heat them up without the tortilla getting soggy?

      You can reheat them in the microwave wrapped in a paper towel for 1 1/2-2 minutes. I like to microwave it for about 1-1 1/2 minutes then place it in my toaster oven for a few minutes.
