The Best Cheeses for Cheese Fondue

The Best Type of Cheeses to Use in Cheese Fondue:

In my opinion, a blend of Gruyere cheese, Swiss or Emmental cheese, and Fontina cheese is the best!

Just using Gruyere and Swiss is a little too strong for my taste as well as some of my kids. (I tested this recipe so many times!)

The addition of creamy Fontina mellows it out and makes it the perfect fondue!

Gruyere Cheese is a Swiss cheese known for its nutty and slightly sweet flavor. It also melts well.

Swiss Cheese has a nutty and mildly sharp flavor. You can substitute it for Emmental cheese which is delicious in fondue. It is a little more pricey though.

Fontina Cheese is an Italian cheese with a creamy texture and mild buttery flavor, bringing the perfect touch to this fondue recipe.

How to Make Cheese Fondue

How to Make The Best Cheese Fondue Recipe Made Without Alcohol:

Grate the cheese: Make sure you don’t use pre-shredded cheese.

Add cornstarch to the cheese: Coat well, I usually just shake it together in a large zipper storage bag.

Rub the garlic in the fondue pot: This gives the fondue a nice subtle garlic flavor.

Add the liquid: Chicken stock, milk, and lemon juice. (The milk makes the fondue a little creamier and not too salty from the chicken stock and the lemon juice helps keep the mixture cohesive.) Once warm, it’s time to…

Add the cheese mixture: Only a little at a time, stir and repeat. Make sure to not let it boil or the cheese will get stringy.

Season the fondue: With nutmeg, ground pepper, sea salt, and paprika. Taste and add more seasonings if desired as well as add more chicken stock if needed to thin out the fondue.

Enjoy! Dip with your favorite cheese fondue dippers!

What to Dip in Cheese Fondue

The Best Dippers for Cheese Fondue:

Bread: Sourdough, Honey White Bread, pretzel rolls, French bread, or baguette, cut up into 1-inch pieces.

Steamed or Blanched Vegetables: Carrots, broccoli, cauliflower, asparagus, etc.

Crunchy Vegetables: Cherry tomatoes, sliced bell peppers, carrots, etc.

Fruit: Apples are great, such as Granny Smith or pears.Potatoes: Roasted or boiled. Golden or red potatoes are best. (My favorite thing to dip in cheese fondue!)

Meat: Ham, smoked sausage, meatballs, bacon, etc.

Pickles: Make sure to dry off before dipping if needed.

Crackers: Any type! In my main picture, the squares towards the top left are homemade sourdough crackers. So good!

  • 6 ounces Fontina cheese (grated)
  • 2 1/2 tablespoons cornstarch
  • 1/4 cup chicken stock (low-sodium)
  • 1 tablespoons milk
  • 1 tablespoon fresh lemon juice
  • 1/8 teaspoon ground nutmeg

  • Combine the grated Gruyère cheese, Swiss cheese, and Fontina cheese with the cornstarch, in a bag or bowl until evenly coated, and set aside.
  • Rub the inside of a fondue pot on the cut sides of the garlic cloves; discard the garlic.
  • In the fondue pot, add the 1 cup chicken stock, milk, and lemon juice and cook over medium-low heat, once warm, slowly add the cheese. Stir occasionally in a figure-eight motion, until the cheese melts, about 5 minutes. Don’t let the mixture boil.

I made this and loved the flavor! Mine was really thick and I ended up adding a lot more milk and it was perfect. I took the leftovers and added velveta cheese and chilies and made the best nacho cheese with it. Such a great recipe!

Can I make this with other cheeses? I have a bunch of Gouda and cheddar…
