It’s MAY! Yay! I’m excited for a fresh new month. I am looking forward to Cinco de Mayo, Mother’s Day and Memorial Day. Do you have any thoughtful ideas for Mother’s Day? I want to do something extra special for my mom this month!
My husband only has 3 more class weekends until he gets a little summer break (for his executive MBA program.) I am beyond excited! I love spending time with him and this past year has been a busy one! We need some time to relax and spend time together as a family.

This was so good! Way too good. I had to give some away so I wouldn’t eat them all. My boys LOVED them too!

Becky’s Bites of Life:
My dad had a stroke last Thursday and had to be taken to the hospital in an ambulance. I was so scared when I heard about it. You just never think anything will happen to your parents! I was sad too because he and my mom were about to leave to come here to Levi’s 2nd-grade program. But instead of spending the evening with us they were in a very scary situation at the hospital. He is doing better each day and for that, I am extremely grateful. I am visiting as often as I can and supporting him and my mom in any way I can. I’m the youngest of 8 so we are all doing our best to show them our love and support. My dad still has a long road ahead of him to recover but each day we are seeing progress so with therapy he should be improving more each day. I’ve been praying a lot and would appreciate if you will include him in your prayers too! And I know it’s not easy staying at the hospital all the time so we are helping out my mom too to feel more comfortable there. Please let me know any ideas you have for making a hospital stay more comfortable.

Derek and I celebrated our 9th anniversary this year! It was pretty low-key because he is so busy with work and school right now. I made us all a nice dinner of homemade lasagna, bread, salad. Dessert was my copycat version of Ghiradelli’s Hot Fudge Sundae. It was all so delicious! I love Derek so much and feel so blessed to have such a wonderful husband! He’s the best!
Baby Luke just keeps growing and growing! He’s 7 months now and is THE cutest little guy! I just might be a little obsessed with him! He just learned to officially crawl only a few days ago and is ALL over the place already! It’s crazy but cute! We all adore him so much!
Things I’m Loving Lately:
-I’m doing the #sugarlessspring challenge this month. I’m usually all about moderation but I was getting sick of so much sugar being everywhere and eating too much of it so I figured it’d be a great time to take a break! I made my overnight oats last night without brown sugar and I made a delicious sugar-free strawberry sauce to add on top. I might share it on my blog. Would you be interested in that recipe? I also made a batch of my No-Bake Energy Bites (similar to this recipe) but there’s no sugar. I used unsweetened coconut flakes and Trader Joes chunky PB which doesn’t have sugar. I do miss having some chocolate bites in it though! I think I’ll make some chocolate ones next. (sugar-free)
-I have short eyelashes and have tried a lot of different mascaras. I love the Lights Camera Lashes Mascara. So far it has been the best mascara to make my eyelashes longer and fuller.
