Happy April Fools Day! I’m posting on a Saturday and it’s no joke! Has anyone tricked you today? I am writing this on Friday and am planning on making jello in clear cups with a straw for my kids for a fun little trick. I think they’ll love it! Follow me on Instagram and if it goes well I’ll post it!
I hope you all had a wonderful March! My little girl turned 2 and we had so much fun celebrating. She’s such a sweetheart! March was very busy and I wish I had more time to post on my blog more but as usual I don’t but I do have so many fun blog ideas in mind for April so hopefully this month I can squeeze in the time!

These cookies are amazing! The chocolate cookie is soft and chewy and just delicious! Then the Andes Mints add the perfect chocolately mint flavor that takes these cookies to another level!
And my most popular recipe of the month that wasn’t posted in March was Marinated Grilled Pork Chops. These are so good and super simple to prepare!

Becky’s Bites of Life:
My darling Carina turned 2! This girl has a mind of her own! She’s so much fun to be around though and she makes me so happy! We had a fun day celebrating! I am planning on posting sometime soon the treat I made for her birthday party. Hint it has to do with Homemade Graham Crackers and Minnie Mouse.
I LOVE the Food Network so when my awesome friend and neighbor Pete was on Cake Wars we made sure we were at the viewing party. He owns the bakery The Mighty Baker in Provo, Utah (the best sugar cookies ever!) and had already won Cake Wars a few months back. He competed again against other champs and he won again! It was super exciting to be in a room full of people cheering. We got to sample the cakes he made for the episode as well. Who knew ketchup cake could be delicious?!
Baby Luke is 6 months old! Time is just flying by. To say I’m obsessed with him is an understatement! He’s seriously the cutest and sweetest baby. He makes me so happy and he loves me so much!
Things I’m Loving Lately:
-I’m super excited for Easter this year. I am hoping to focus more on the Savior with my kids than the Easter bunny. Although of course, we’ll have an egg hunt! I’m thinking of making these Homemade Ressurection Rolls from my friend Laura’s blog Joy Food Sunshine with my kids.
-I am also loving the #PrinceofPeace campaign. It’s focused on helping us include the attributes of the Savior more in our life to help us feel peace in this crazy world. Just this past month my boys taught me a lesson in faith. My brother-in-law is in England and his bag with all his belongings were stolen including his pictures he had taken the past 1 1/2 years, his ipad, drivers license, wallet and more! I told him we would pray for him but honestly, after 1 week I lost hope and stopped but my boys did not. For almost a full month they prayed for him to find his bag. I thought it was a lost cause until we found out that he got his bag back! Whoa! I was shocked and a little embarrassed I lacked in faith but so proud of my boys for not losing hope and trusting in the power of prayer. I have no doubt God hears our prayers and cares about the small and simple things in our lives!
-I’m trying to eat healthier and am realizing the more I plan ahead the better I eat. I still am obsessed with my Overnight Oats. I now prepare it with less brown sugar and plenty of flax seed and chia seeds. I add berries to it in the morning and am loving it! I make a batch big enough to last us 2-3 days. One of my favorite lunches right now is chicken, brown rice and veggies. The night before I pull out a small chicken breast and add a tiny pinch of salt and a little olive oil. Then when I’m ready for lunch I grill it on my cast iron pan and add a little seasoning like cajun or Mrs. Dash. Then I heat up this crazy fast and healthy brown rice (I bought it from Costco) and add a little tumeric to it. Then I eat whatever veggies or salad I have on hand. Sometimes I even just use the steamable vegetables that can be microwaved. And it makes enough that I have leftovers for another day. It’s great! What are your favorite healthy lunches? I need more ideas!

I just absolutely LOVE Monster Cookie Energy Bites! But, have found the amount of M&M’s and Choc. Chips are overwhelming. I generally make 4 batches at a time and use just under 1/2 cup each M&M’s and Chips. For me, this creates a complement, rather than a take-over. For a single batch, I might suggest a handful of each.
