A delicious recipe for Chocolate Chip Cookies using Einkorn flour.

I recently tried out some new products from Jovial, a maker of Einkorn based food. Here’s their explanation of what Einkorn is:
Einkorn is the only wheat that has never been hybridized. Because of this, gluten sensitivity usually tolerates it very well. The gluten in einkorn lacks the high molecular weight proteins that many people can’t digest. For those sensitive to modern wheat, einkorn is a delicious alternative (but einkorn is not suitable for those with Celiac Disease). Einkorn contains roughly 30% more protein than modern wheat and more protein than any other grain, while having 15% less starch, translating to fewer carbohydrates. This increase in protein will leave you feeling more sustained and less bloated after eating einkorn.

Jovial has a lot of great products. You can check them all out here. I enjoyed trying them and especially liked the Tomato Basil crackers. It’s nice to have a quick and easy-to-grab healthy snack!
My favorite product was this all-purpose flour 100% Organic Einkorn. They have a lot of great recipes you can use with it like sandwich bread but I decided to be creative and make cookies because who doesn’t like a good chocolate chip cookie with a healthy twist?!

These cookies were amazing! I was surprised! Honestly, I’m pretty proud of myself too since I created the recipe based on one of their cookie recipes. The cookies came out thick, chewy, slightly crunchy on the edges and so heavenly! My kids ate it and never knew it was made with healthy Einkorn wheat flour. I haven’t tried it yet but I’m sure you can sub in all-purpose or white wheat flour.

Chocolate Chip Cookies
Ingredients
- * 1¾ cups (210 g) all-purpose einkorn flour
- ½ teaspoon baking soda
- ½ teaspoon salt
- 8 tablespoons butter, unsalted and softened
- 3/4 cup brown sugar, lightly packed
- 1/4 granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups semi-sweet chocolate chips
Instructions
- Preheat the oven to 350° F. Line a baking sheet with parchment paper.
- In a medium bowl, mix together the flour, baking soda, and salt.
- In the bowl of a standing mixer fitted with a paddle attachment, cream together the butter and both sugars for 2 minutes, stopping a few times to scrape down the sides as necessary.
- Add the egg and vanilla extract and beat on medium-low speed for 2 minutes until thoroughly combined.
- Add the flour mixture and beat on medium-low speed just until the dough absorbs the flour.
- Gently fold in the chocolate chips.
- Spread cookie dough on baking sheet, spaced 2 inches apart. Bake for 8-10 minutes until edges are just golden.
- Remove from oven, let cool on baking sheet for 5-10 minutes, and then transfer to wire rack to finish cooling. (Store in an airtight container.)
Notes
*I haven't tested it yet but I am pretty sure you can sub with all-purpose or white whole wheat flour.

Becky, no disrespect intended…the cookies look AMAZING and the recipe looks like a winner! I’ll be trying it this weekend! BUT – the name is misleading as these are NOT “whole wheat”. That Einkorn flour is all-purpose. It is white. It has been processed and does not contain the whole wheat. I use it exclusively, and they do have a whole wheat version. I’m glad you’re promoting this wonderful product.
