Cowboy Caviar is one of my favorite dip recipes! My good friend made it for me a few years ago and I’ve been hooked ever since! It’s packed full of vegetables and flavor! There are so many delicious ingredients in this recipe; fresh tomatoes, avocados, corn, black-eyed peas and more! I especially love the avocados in it because as much as I love guacamole it’s nice to enjoy avocados in a different way sometimes. And you can certainly adjust the ingredients as you please. I know some of you don’t like cilantro so feel free to leave that out.
Another reason I love this dip so much is because I love tortilla chips and it pairs so well with them! Chips and dips are the best! The perfect appetizer and snack! As much as I love tortilla chips I know they often aren’t the healthiest so that’s why I was so excited to enjoy this Cowboy Caviar with Food Should Taste Good Tortilla Chips and it was so good!

How cool is that! And they have so many delicious flavors. I am addicted now to Food Should Taste Good chips! I have always loved the Multigrain chips and enjoyed trying out Blue Corn and Guacamole for the first time. I loved the flavor and slight spiciness of the Guacamole chips and loved the color and tastes of the Blue Corn Chips. My three year old loves chips so he was happy to try out each flavor with me. His favorite are the multrigrain chips.
I also tried out the Sweet Potato tortilla chips and LOVED it! Sweet potatoes are one of my favorite healthy foods but usually takes too long to prepare but now with these chips I can enjoy Sweet Potatoes in an instant.
The Sweet Potato chips tasted so good with my easy, creamy and delicious Chip Dip recipe.
- 1 can (10-14 oz.) white corn (or yellow)
- 1 can (14 oz.) black-eyed peas
- 6 roma tomatoes, diced
- 2 avocados, diced
- ¼ cup cilantro, chopped
- 3 green onions, thinly sliced
- 1 cup Italian salad dressing
- Drain the corn and black-eyed peas. Place in a large bowl and add all remaining ingredients. Mix together. Add salt and pepper to taste.
- Keep chilled in the refrigerator. (Lasts for 2-3 days.)
