Meals That Freeze Well

Meals that freeze wellThis past week and a half I went a little crazy making and freezing things! With less than 2 weeks until my due date (yay!) nesting mode is in full force.  I mostly had Derek in mind making sure he has plenty of options for lunches to take to work but I’ll have a few things too.  To check out what meals I have on my blog that freeze well check out my label, Meals that Freeze Well.

The pictures in this collage are everything I made this past week to freeze. The lunch/dinner recipes are Burritos, Breakfast Burritos, Pizza Pasta, Baked Creamy Chicken Taquitos, Bean and Cheese Burritos and Beef Stroganoff.

I also doubled my recipe for No-Bake Energy Bites for a quick snack, and froze that. As well as made a batch of the most amazing chocolate chip cookies in the world, The NY Times Chocolate Chip Cookies.  I thought it’d be nice to have that ready to go so when people bring us a meal we can return their containers with these incredibly yummy cookies as a thank you.

    We LOVE freezing extra cookie dough. Spaghetti sauce and soups also freeze well. We will also brown our hamburger before freezing it so it’s easy to mix into whatever we’re making for dinner.

    I just froze a bunch of double chocolate zucchini muffins. It is a great thing to go to when I’m craving chocolate, but still want it healthy. They thaw pretty quickly but i like them still frozen too.
