Once October hits my mind thinks endlessly of fun Halloween treats! For years you all have LOVED my recipe for No-Bake Monster Cookie Energy Bites! (Original picture below.) And since you know I love adding candy eyes to all the things I thought it would be perfect to really make my Monster Energy Bites get a monster makeover!
Not only are these energy bites delicious they are also filled with mostly good-for-you ingredients! This Halloween snack is fun and tasty but gives you a little boost of energy instead of a sugar crash!
HOW TO MAKE HALLOWEEN MONSTER COOKIE ENERGY BITES
Making energy bites is very simple and quick! You just mix together the ingredients, either with a hand mixer/stand mixer or by hand. I usually use my hand mixer because it’s easier and faster. Then you chill it for just a little bit in the fridge and scoop or roll it into balls. Then with this Halloween Monster Energy Bite recipe, you also add a few more mini M&M’s and candy eyes on the sides and top of the energy bites.
My darling daughter enjoyed helping me take pictures of this recipe. She couldn’t wait to eat it! Isn’t she the cutest? This is such a fun recipe for kids and adults! It’s fun to make and eat!
INGREDIENTS IN THESE HALLOWEEN MONSTER COOKIE ENERGY BITES
You have your basic energy bite ingredients: Oats, peanut butter, & honey.
But some healthier ingredients are added: ground flaxseed, coconut flakes (can use unsweetened), and chia seeds.
And a few fun ingredients are added! Mini chocolate chips, mini M&M’s, and candy eyes!
Note- I have changed this recipe ever so slightly from my original Monster Cookie Energy Bite recipe. I wanted to add some coconut flakes so I have also added just a little more peanut butter.

Halloween Monster Cookie Energy Bites

A fun and healthier snack for Halloween! These Monster Cookie Energy Bites are the perfect treat!
Ingredients
- 1/2 cup + 2 tablespoons creamy peanut butter
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 1 cup old fashioned oats
- 1/4 cup ground flaxseed
- 1/4 cup shredded coconut flakes
- 1 tablespoon chia seeds
- 1/4 cup mini chocolate chips
- 1/4 cup mini M&M's (+more for pressing on the outside)
- candy eyes
Instructions
- Mix all ingredients together in a large bowl. Refrigerate for 15-30 minutes then roll into balls. Add a few more mini M&M's and candy eyes.
- Keep energy bites stored in an airtight container in the fridge.
