These Healthy Sweet Potato Pancakes are packed full of nutrition and are so delicious! The perfect healthy breakfast for kids and adults!

My kids and I are obsessed with these pancakes! I’ve been making them for months and am so excited to finally be sharing the recipe with you all! I just made these again last week and my kids devoured them in two days! I made them one night intending them to be for morning the next day but they were excited when they saw I was making these and they each had two! And asked for more the next day. We love these! My husband and I think these are so much better than regular, plain pancakes. The texture and flavor is so much better. Plus bonus! These are super healthy for you.

Made with 1 full cup of sweet potato puree which is awesome because sweet potatoes are a super food! They are packed full of vitamins, beta carotone, and fiber. This recipe also uses white whole wheat flour and very little oil and sugar, only 1 tablespoon each! I love how fast this recipe is to prepare and how delicious it is!

Another great thing about these pancakes is they taste great days afterwards! I love making a batch of these to keep in the fridge for a quick breakfast or snack for my kids.

As with any pancake recipe you can make it about any size. I like to make some small for Carina so she can pick it up and eat it. This is one of her favorite recipes I make her.
Enjoy!
