Say hello to the best healthy chocolate mint smoothie! This Mint Chocolate Protein Smoothie is creamy, rich, delicious, and nutritious! It only takes minutes to prepare and tastes so refreshing! I’m obsessed. If you choose to add a drizzle of chocolate sauce and coconut whipped cream on top, it will take the flavor up even more!
I have been trying to get more protein in my diet and have fallen in love with Just Ingredients. Their protein is made with real ingredients and doesn’t bother me like other protein powders.
A couple of months ago, I went to Aubergine Kitchen, (a healthy quick-serve restaurant with locations in Utah) and tried their Cocoa Mint Smoothie made with Just Ingredients Mint Chocolate Protein Powder. It was delicious but I knew I could make it at home to save money and time. Not only did I create a fantastic copycat recipe, but the taste and texture were even better with my homemade version! Win, win!

Ingredients Needed to Make this Mint Chocolate Protein Smoothie:
- Cashew Milk (or another type of milk)
- Medjool date
- Ripe Avocado
- Cocoa Powder
- Mint Chocolate Protein Powder (or another flavor)
- Vanilla Extract
- Ice
Optional:
- Chocolate Fudge Sauce
- Whipped Coconut Cream or Heavy Cream
- Mini chocolate chips or cacao nibs

How to Make this Mint Chocolate Protein Smoothie:
1. Blend all ingredients in a high-speed blender. Start with 2/3 cup cashew milk, and add more if needed.
2. Once blended, if desired, add more ice and blend again for a thicker texture.
3. Serve as is or drizzle chocolate sauce or fudge sauce on the inside of a cup, and top with whipped coconut cream or whipped cream. Top with a mint leaf if desired.

How to Make Coconut Whipped Cream:
- Chill a 13.5 can of full-fat coconut milk for at least 1 day or more.
- Put your mixing bowl and whisk attachment in the fridge for at least 15 minutes to chill.
- Open up the can of coconut milk, reserve the water for another use, and add the coconut cream to the mixing bowl.
- Mix for 1 minute then add desired amount of honey, maple syrup, or powdered sugar to taste. Also, add 1 teaspoon vanilla extract.
- Continue to mix for about another minute, until smooth and creamy.
Note: Try adding some heavy cream if it isn’t whipping smoothly.
Or top the smoothie with regular whipped cream. (Half this recipe for whipped cream.)

Tips and Tricks when Making this Mint Chocolate Protein Smoothie:
- If you don’t have a powerful blender I suggest chopping the date into small pieces before blending to help it blend better into the smoothie.
- Avocados can be tricky to be ripe when needed, but it’s SO easy and convenient to freeze avocados. I add chunks of ripe avocado on a plate or cookie sheet lined with parchment or wax paper, place in the freezer until frozen then keep stored in the freezer in a zip-lock bag until ready to use. (And you can use what you need when you need it!)
- You can substitute half a frozen banana instead of the avocado, if you prefer.
- Customize as desired- Use your favorite type of milk, add spinach, nut butter etc.

- 1 medjool date, pitted (or 1 tablespoon maple or honey)
- 1/4 ripe avocado, peeled and pitted
- 1 tablespoon unsweetened cocoa powder
- 1 scoop Just Ingredients Mint Chocolate Protein Powder (or another brand)
- 1/2 teaspoon vanilla extract
- 1/2 cup ice
Instructions
