Breakfast casseroles are the best breakfast! It’s an easy way to feed a lot of people a delicious breakfast! You will LOVE this Tater Tot Breakfast Casserole. I’ve made it many times for my family and relatives and everyone raves about it! And you know the best part!? It works fabulously as an overnight breakfast casserole too. I have tried it both ways and it’s delicious either way! I actually liked it just a touch better when I let it sit overnight.
This recipe is magic. The ingredient list isn’t very long but together it makes for a delicious casserole! This recipe is originally from The Pioneer Woman but I have made a few changes to make it even better! One change I made was adding 2 more eggs. My husband is a big fan of eggs and says the more the better! I have to agree.
The bottom of the casserole dish is lined with tater tots. If you would like to you can save a big handful of tater tots and add them to the top of the casserole once it’s assembled. I’ve made it both ways and of course, both ways are delicious! It’s just your preference. When I made this for my kids the first time they knew I had used tater tots but were confused when they couldn’t see them on the casserole. They add so much flavor to this casserole you will love it!

How to make Tater Tot Breakfast Casserole:
1- Line a casserole dish with tater tots. (Optional, set aside a big handful to place on top of the casserole.)
2- Top with cooked sausage and sauteed onions.
3- Add diced bell peppers.
4- Top with half the cheese.
5- Pour the egg/milk mixture over the casserole.
6- Add the rest of the cheese! This recipe calls for plenty of cheese. You can add a little less if you prefer. (Then add the handful of tater tots if you want.)
Either bake it right away or stick it in the fridge overnight and enjoy in the morning!

Easy Cheesy Breakfast Casserole
1. Preheat the oven to 350 degrees F. (Unless baking it the next day.) 2. Line the tater tots in a buttered or greased 9-by-13-inch baking dish. 3. Add the olive oil to a large skillet over medium heat. Add the sausage and cook, breaking the sausage up with a wooden spoon, until browned and cooked through about 8 minutes. Add the onion and saute until soft, about 3 minutes. Drain the grease, then set aside to cool slightly. 4. Sprinkle the sausage and onions over the tater tots. Sprinkle the diced bell peppers evenly over that. Then sprinkle half of each type of cheese. 5. In a large bowl, mix the eggs, milk, half-and-half, salt, pepper, and seasoned salt. Pour over the tater tots and sausage mixture, then top with the rest of the cheese. Cover with foil. Put in the fridge overnight or cook right away. 6. Bake, covered, for 30 minutes. Remove the foil and continue to bake until the cheese is brown and bubbly and the casserole is cooked through another 25 to 35 minutes. How many servings is it? I need to feed about a dozen guys!
It makes about 8 servings. So I would suggest making two casseroles unless you have other side dishes, you could just cut the casserole into 12 pieces. Enjoy!
