Easy Acai Bowl

A simple and super tasty recipe for an Easy Acai Bowl. Made with acai, banana, mango, pineapple, blueberries, and apple juice. Topped with granola, banana, strawberries, coconut, and honey. You’ll love this recipe for the perfect healthier breakfast or snack!

Easy Acai Bowl

Smoothie bowls have been around for years but somehow I didn’t try my first one until a few months ago. Once I did, I understood why people love smoothie bowls so much! It’s eye-pleasing, satisfying, and so delicious! I love the variety of textures, vibrant smoothie bowl color, and all the different colors of the toppings. How could you not love a smoothie bowl?

I first tried out smoothie bowls at Roxberry. I tried a few different flavors but my favorites are the acai bowls and pitaya bowls. Today’s recipe is my own copycat version of Roxberry’s Classic Acai Smoothie bowl. The only difference is I felt like it needed the addition of pineapple. Adding pineapple is always a good idea in my opinion!

Acai bowls are great for smoothie bowls because it has healthy fats so it keeps you full for longer. Plus the vibrant color is a great way to start your day! 

Acai packet

You may or may not be familiar with acai. I wasn’t too familiar with it but have learned more about it.

Fun Facts about Acai:

-Acai is pronounced- ah-sigh-EE

-It’s nicknamed “nature’s purple gold” because of it’s beautiful deep purple color and health benefits.

-Acai berries come from the acai palm tree found in Central and South America.

-It’s a superfood! It’s rich in antioxidants, fiber, calcium, and healthy fats.

-You can find acai in frozen packets at the grocery store. I bought mine from Trader Joe’s.

-They also sell powdered acai. 

Acai bowls

How to make this Easy Acai Bowl:

Acai Bowls are similar to making a smoothie but it’s thicker and creamier.

1- Pull out the acai packet from the freezer. Either wait a few minutes for it to defrost a little or run it under warm water.

2- Break it up into chunks and add to blender.

3- Add the rest of the Acai Bowl ingredients to your blender. 

4- Blend until smooth. You may need to add more liquid depending on the quality of your blender.

5- Pour into a bowl and top with your favorite smoothie bowl toppings.

I topped mine with granola, banana, strawberries, coconut, and a drizzle of honey. But the options are endless!

Here’s a helpful list of Acai Bowl topping ideas:

Fruit: Raspberries, blueberries, strawberries, bananas, blackberries, kiwi, melons…

Seeds: Chia, flax, hemp, sunflower, pumpkin

Nuts: Pecans, walnuts, pistachios

Other: Granola, honey, peanut butter

Easy Acai Bowl
Prep Time 10 minutes
Total Time 10 minutes

Ingredients

  • 1 packet acai, broken into pieces
  • 1/2 banana, sliced and frozen
  • 1/3 cup mango, frozen
  • 1/3 cup pineapple, frozen
  • 1/4 cup blueberries, frozen
  • 1/2 tablespoon honey
  • 1/2 cup 100% apple juice

Toppings:

  • Fresh fruit such as bananas, strawberries, raspberries, blueberries...
  • Coconut, Granola, Honey, Chia Seeds...

Instructions

  1. Add all the acai bowl ingredients to the blender.
  2. Blend until smooth, adding more liquid if needed.
  3. Pour into a bowl and top with your favorite toppings.
  4. Serve immediately.

Notes

You can substitute apple juice for another liquid of your choice.

For a creamier Acai Bowl add some Greek yogurt.
