Tuscan Tortellini Pasta Salad

Memorial Day is just next week and I can’t tell you how excited I am that BBQ season is back! I am a big fan of pasta salads. You can see some of my favorite recipes here, 10 Amazing Pasta Salad Recipes. I haven’t met a pasta salad I didn’t like but I thought it was time for a crazy easy and delicious pasta salad and so that’s what you have today, EASY and TASTY Tuscan Tortellini Pasta Salad. This recipe will rock your world!

I love how there aren’t many ingredients in this pasta salad but put them all together and you got a fancy looking and flavorful pasta salad!

Ingredients needed:

  • Tortellini
  • Salamii
  • Baby Spinach
  • Sun-dried Tomatoes
  • Freshly grated Parmesan
  • Dressing: Olive Oil, Balsamic Vinegar, and Honey
  • Italian Seasoning
  • Salt & Pepper 
  • Optional: Fresh Basil

Tuscan Tortellini Pasta SaladThis pasta salad is made in 3 easy steps. 

  1. Cook the tortellini
  2. Whisk together the dressing. (Crazy fast and easy!)
  3. Mix all the ingredients together.

Just like that, you have the perfect side dish! No stress involved and you can relax and enjoy your summer BBQ, party or wherever you choose to serve this!

Tuscan Tortellini Pasta Salad

I’m a big fan of recipes that are simple but have amazing flavor and texture. This Tuscan Tortellini Pasta Salad is just that! It tastes amazing! Everyone knows how good tortellini is and then you just add to its tastiness by adding sundried tomatoes, salami, baby spinach, parmesan cheese, and a simple vinaigrette.

We enjoyed this with some cast iron cooked chicken for dinner and loved it! It’s so versatile. It’s the perfect side dish to almost any meal!

Tuscan Tortellini Pasta Salad

Tips & Tricks:

-You can use fresh or frozen tortellini.

-In addition to the salami, you could also add prosciutto or pepperoni or just one of those.

-There are so many different mix-ins you could add to this such as fresh tomatoes, cherry tomatoes, red onions, olives, bell peppers, pepperoncini peppers, red pepper flakes etc.

-Instead of the Parmesan, or in addition to it you could add fresh mozzarella, feta or diced provolone.

-This recipe can easily be doubled.

Can I make this Pasta Salad in advance?

Yes! This pasta salad tastes great the next day or so. I would just suggest waiting to add the baby spinach until before you serve it and also, toss it with a little more olive oil.

How long will it last for?

Keep it stored in an airtight container in the fridge and it will last about 3 days or so.

Tuscan Tortellini Pasta Salad

Ingredients

  • 1 lb. fresh or frozen cheese tortellini
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1/2 tablespoon honey
  • 1/2 teaspoon Italian seasoning
  • kosher salt
  • Freshly ground black pepper
  • 3/4 cup chopped salami
  • 3/4 cup baby spinach
  • 1/2 cup oil-packed sun-dried tomatoes, chopped
  • 1/4 cup freshly grated Parmesan
  • optional: 2 tablespoons fresh basil, chopped

Instructions

  1. Cook tortellini according to package directions. Drain and transfer to a large serving bowl.
  2. To make the dressing: Whisk together olive oil, balsamic vinegar, and honey. Add in the Italian seasoning and salt and pepper to taste.
  3. In the large bowl with the cooked tortellini, add salami, spinach, sun-dried tomatoes, and dressing. Toss together until well combined.
  4. Stir in the Parmesan cheese and if using, the fresh basil.
  5. Keep stored in the fridge until serving.
