Chocolate is my weakness! It’s so good and I personally think chocolate desserts are the best type of dessert! My brother and his family were in town from Ohio over Christmas break. We spent as much time with them as we could. He LOVED my chocolate chip cookies I made him the first time we all got together so being the awesome sister I am I made them two more times for him! I just might have eaten more than I should have each time. So I decided I better take a break from baking and all things dessert. But of course I still need a little chocolate in my life so I’ve been working on perfecting these No Bake Chocolate Cookie Energy Bites. I’ve made them three times just in the last few weeks and am loving them! My kids are big fans too.
No Bake Energy Bites are our favorite quick and healthy energy-boosting snack around here. I love trying new variations. My favorite so far are my No Bake Monster Cookie Energy Bites and No Bake Toffee Energy Bites. I of course will be sharing more energy bite recipes with you as I come up with more ideas. Feel free to give me your ideas of what you’d like me to create in the comments.
To make these energy bites more chocolatey and cookie like I decided to add a little chopped dark chocolate. You can certainly use chocolate chips if you prefer. I used this Ghirardelli Intense Dark Chocolate Bar. (About half/4 squares.) It has less sugar than milk chocolate plus we all know dark chocolate is good for you! It’s so yummy and made these energy bites even better! But certainly feel free to omit it if you want.
Every time I share a No Bake Energy Bite recipe there are always haters that say it’s not healthy! Well overall it actually is really healthy. Plus a little chocolate (especialy dark) is good for you. Let’s be reminded why so many ingredients in this recipe are healthy and energy-boosting…
Peanut Butter- Full of protein, fiber and potassium. Gives you an energy boost.
Oats- Filling, whole-grain, full of fiber and so much more!
Honey- Natural sweetener and full of vitamins.
Flax Seed- High in Omega 3, full of antioxidants and vitamins.
Unsweetened Cocoa Powder- Contains minerals, antioxidants and fiber.
(Optional) Chia Seed- Full of Iron, Omega 3, and even more vitamins and minerals.
(Optional) Wheat Germ- Boosts immune system, full of nutrients.
These cute little No Bake Energy Chocolate Cookie Bites remind me of the classic No Bake Chocolate Cookies. Those are pretty good until you realize it’s mostly fat (butter) and a TON of sugar! I personally think these taste so much better!
I love the taste of the energy bites. There is peanut butter but it doesn’t take over the flavor of the chocolate. The two balance out perfectly. You also get a taste of the chopped chocolate in each bite and it’s so delicious! The solid little chunks of chocolate are so heavenly! The oats add a great texture to it as well. I think you’ll love these as much as we have been loving these lately.

How would you tweak the recipe if you want to add some dried fruit? Thanks!
It depends how much dried fruit you are adding. You could add just a little less oats. And you could also add a little more peanut butter. You just need the texture to be sticky/wet enough to stick together to be formed into balls.
