The perfect healthier protein packed snack! Topped with fun ingredients these Apple Monster Cookies are the best snack! These are vegan and gluten free.
Cookies are my favorite dessert and weakness! I needed a healthier cookie in my life so I decided to make apple “cookies” instead. Now don’t get mad at me because it’s not really a cookie but it’s quite similar! Circle shape, chocolate chips etc! Close enough and the best part was my kids LOVED it! Of course I did too that’s why I’m sharing it today. I love all things monster recipes like this recipe and this one so I decided to make these apple cookies monster style by adding peanut butter, chocolate chips, M&M’s and granola. You can even just sprinkle on oats if you like but I liked the crunch from the granola. (I used the low-fat apple granola from the bulk section at WinCO.)
You could use whatever type of apple you’d like. I decided to use Gala and Granny Smith because those are two of my favorite types of apple.
These are the toppings you can use but the ideas are really endless! Use any nut butter you like or even nutella or cookie butter (Biscoff Spread.) Also, top with anything you’d like such as shredded coconut, crushed pretzels, dried fruit, nuts etc. Be creative!
I think this recipe is a great after-school snack and you could also have the toppings out and let your kids create their own apple cookie! Super fun!
Some apple slices had bigger cores then others so a couple look more like donuts than cookies. 🙂 The apple slices that had a small core I cut out I just spread the peanut butter across the entire slice to get the cookie look.
Eat these right away or keep in the fridge. I really enjoyed it cold.
