Mascarpone Berry Salad- The perfect summer fruit salad! Delicious fresh mixed berries added to a creamy whipped mascarpone cream makes for the perfect side dish!
Any dessert with berries in it is my favorite dessert in the summer. For years my husband and I have enjoyed making mascarpone cream with berries on top. So recently I thought it’d be fun to serve it a little differently to make it more friendly for a crowd. By mixing fresh berries and this delicious mascarpone cream on top you have the perfect yummy pot luck side dish! I also love that it’s red, white and blue!
I used my favorite berries for this recipe. Fresh strawberries, blackberries, raspberries and blueberries. The mascarpone cream mixture is simple. Heavy whipping cream, mascarpone, powdered sugar and vanilla extract.
Aren’t berries so beautiful? Which berry is your favorite? So hard to pick just one but a juicy strawberry is my very favorite.
Before serving just simply mix the delicious mascarpone cream mixture with the berries and you have a beautiful and yummy dish! You can even serve the berries and cream layered in cute little bowls or cups for a different look.

Notes
Sounds like a simple berry ambrosia? Might it be made ahead of time and remain stable? 8?16? hours before serving?
Thank you
Yes, I guess it is similar to that. I would prepare and store the fruit and mascarpone cream mixture separately and then before serving mix them together.
