Happy May! And almost Cinco de Mayo! I’ve been loving Mexican food lately so I’m more than excited for tomorrow! Especially since we’ll be going out to eat my favorite carne asada street tacos! What will you be eating to celebrate? I’m thinking I should make horchata too! I love it but have never tried to make it before.
Did you have a good April? I hope so. Did you catch my big news? We are so excited! I’m 18 weeks now and am getting excited for my 20 week ultrasound to see my cute baby again!

So much happened in April it’s so hard to just choose a few pics. (Find more fun ones here on my Instagram!)
My husband was gone for 3 1/2 days and it felt like forever! We’ve only been apart one night our entire 8 years of marriage! He went to Florida for work. He was able to go to Disney Springs one night and the boys were thrilled he brought them back Star Wars souvenirs. And I was just happy he was back. haha It wasn’t totally crazy but life is much easier and more fun with him around! Especially being pregnant and having 3 kids.
I made my Homemade Graham Crackers again this week and OH MY GOSH! They are so good! I hadn’t made them for a while and so I was reminded again how amazing they are and why it’s one of my all-time most popular recipes on my blog! I won’t tell you how many my kids and I ate in one sitting. haha They are delicious!
Levi played soccer for the first time this year. He really enjoyed it! His last game was yesterday so he’s sad it’s over. I love this picture of him and Carina. She really loves him!
How cute are my kids?! Less than 3 weeks until summer break for Levi and we are all excited to spend the days together! Our plans aren’t anything crazy since I’ll be in my 3rd trimester most of summer but we plan to spend a lot of time at different parks, splash pads, and visiting friends and family. What are your summer plans?
Fun Anniversary Date Idea:
On April 26th we celebrated our 8th anniversary! Derek told me he took the day off of work but the rest was a surprise for me! What he planned was so much fun and so thoughtful I’d thought I’d share it with you all.
I woke up to this sign taped up just outside our bedroom door. I was so excited! I thought it was so sweet and thoughtful! It made the entire day so much fun and filled with anticipation.
He gave me one of these papers for each reason he loved me at the designated time. Each reason had an activity, place to eat or gift. #1 was our budget to spend the day (that’s very important to my husband). #2 We went to Orson Gigi and I got to pick out anything I wanted. (So much fun!) #3 He gave me a canvas print of the same picture printed on the paper. #4 We went to eat at the El Salvador Restaurant. (Yummy pupusas!) #5 We walked around the new Provo City Temple. #6 We picked up the best ice cream at the BYU creamery. We did all that with our two youngest kids and it was just fine having them with me. After that we came home, went to my son’s soccer game then had a baby sitter for our dinner date.
#7 He let me pick where we went to dinner. This was the best because I’ve been craving so many things! lol #8 When we got home he had the picture printed on the page as a canvas print for our bedroom waiting for me to see when I walked in the house. It was so awesome!
This would be such a fun date not only to celebrate an anniversary but also for a thoughtful date. Just think about what your spouse likes to do/eat etc. And plan in activities, places to eat and surprise gifts. Anyone would LOVE this!
