Strawberry Butter

Strawberry Butter is so good! I have never had it before now. I was trying to come up with a recipe idea with my strawberries and thought of strawberry butter.  Best idea ever! Now I am officially in love with strawberry butter and I know you will be too if you give it a try!

I wasn’t exactly sure how to go about making it but I just adapted it from my Strawberry Buttercream recipe but added way less sugar. It was perfect and so pretty!

IMG_5787I of course had to do something extra cute with it so I made hearts with it. It’s so easy! Just place the butter between a sheet of wax or parchment paper and fold it over the butter and use your hands to press it into a square with the desired thickness you want. Then freeze it for about 10 minutes and cut out hearts!

I used the hearts on top of my French Toast and man was it amazing! My  boys loved it too! It would also go great on toast, toasted English muffins, pancakes, waffles etc.

This would be perfect for Valentine’s Day breakfast or any day of the year!

Strawberry Butter

Strawberry Butter

Ingredients

  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/4 cup powdered sugar
  • pinch of salt
  • 2-3 tablespoons finely chopped strawberries

Instructions

  1. Using an electric mixer beat the butter and powdered sugar for 2-3 minutes. Add the salt and strawberries until incorporated. Keep refrigerated and serve at room temperature.
  2. To make hearts, place the butter on a sheet of wax or parchment paper and cover the butter with part of the sheet. Using your hands, smooth out butter until desired thickness. Place in freezer for about 10 minutes. Use a cookie cutter to cut shapes out.

Notes

I've made this using both fresh and frozen strawberries. Both ways are great! Using frozen strawberries will result in a pinker butter.

    Love the cute heart cut-outs! My family would love it! How long can you keep the butter? It seems like the strawberries would weep, making it watery after a bit.

      Thanks Jenny! I’ve had some of this butter in my fridge for almost a week now and it’s the same! It’s not liquidy at all. Just keep it stored in the fridge in an airtight container.

    oh my gosh, this strawberry butter looks so easy but so so good! I love that you did the butter and the toast in heart shapes! Can you believe I don’t own a heart shaped cookie cutter — definitely need to change that!
