Have you ever had brown rice before? I wasn’t a big fan until I came across this recipe. Brown rice can be tricky to make on the stove-top and I haven’t had much success with that. So when I found this incredibly easy recipe that seemed so simple and perfect, I was so excited to try it. It takes no more than 5 minutes to prepare it and after it’s baked it comes out perfectly cooked and fluffy! It tastes so good you’ll realize you don’t need white rice in your life anymore!
There are so many wonderful benefits from brown rice. Some are it’s a whole grain, high in fiber and is rich in anti-oxidants. So why not give it a try?
Here is how you make the rice:
1– Add the brown rice to a 8×8 pan.
2– Add chicken broth or water.
3– Cover tightly with a double layer of foil.
4– Bake. Let sit for 5 minutes then fluff with a fork and serve!

Baked Brown Rice

Ingredients
- 1 Β½ cups brown rice
- 2 Β½ cups low-sodium chicken broth or water (if using water, add 1 tsp. salt)
Instructions
- Preheat the oven to 350 degrees. Lightly grease an 8x8-inch or 9x9-inch baking pan. Place the rice in the prepared pan and pour in the liquid. Stir to equally distribute the rice. Cover tightly with a double layer of aluminum foil and bake for 1 hour and 10 minutes.
- Remove from the oven and let sit for five minutes before removing the aluminum foil and fluffing with a fork. If your rice still has a bit of liquid on the bottom or if it is dried out, adjust the baking time up or down to make changes.
Notes
This recipe doubles well for a 9x13 pan.
Variations: Add sauteed onions to the rice before it is cooked.
For Cilantro-Lime Rice: Cook the rice with 1 medium onion that has been chopped and sauteed. When rice is done cooking add 2 handfuls of chopped cilantro and the juice and zest of 1 lime.

I’ve always used minute brown rice since brown rice normally takes so long to cook.
I’ve never tried minute brown rice but I can bet you this is so much better with the same effort! π (Just a longer wait time.)
