
Pesto, Mozzarella & Tomato Grilled Cheese
Ingredients:
Sandwich bread (or about any other type)
Pesto
Tomatoes, sliced
Mozzarella cheese, sliced
Directions:
Set skillet to medium heat. Assemble sandwich by spreading pesto on each piece of bread. Top with sliced tomato and season with salt and pepper. Layer on the mozzarella and top with a piece of bread. Drizzle olive oil over skillet’s surface and place sandwiches on the hot skillet.
Place another heavy skillet over the top to form a “press.” Turn after 2 to 3 minutes and replace weight. The sandwich is ready when golden brown and mozzarella has melted around the edges.
This sounds similar to the Zupa’s grown-up grilled cheese (which is one of my favorites). I think the only difference is that they have munster cheese. So yummy on cold weather days!
