Bacon, Tomato & Guacamole Grilled Cheese

Being a mom of 2 little boys is a busy job!  I used to have plenty of time to cook dinner but now I just don’t have as much time so I’ve been focusing more on quick and easy dinners.  One of my new absolute favorite quick dinners are these Bacon, Tomato & Guacamole Grilled Cheese Sandwiches.  As simple as it sounds (and is to make) these are seriously one of my favorite sandwiches ever! And if you cook the bacon and make the guacamole ahead of time it’s super fast!

Love to be in the KitchenWe just recently (and finally!) bought a second car. I feel so free now! I am no longer stuck at home. It’s awesome being able to go wherever I need to go and visit family.  One of my favorite things I have done was visit Derek at work to have a picnic for lunch. I brought these awesome sandwiches and we had so much fun relaxing together along with the kids and enjoying an awesome lunch.

Bacon, Tomato & Guacamole Grilled CheeseBacon, Tomato & Guacamole Grilled Cheese 
Recipe adapted from Sweet & Savory
Ingredients:
Sandwich bread (or Focaccia bread)
Tomatoes, sliced
Bacon, cooked
Swiss & Sharp Cheddar cheese
Guacamole

Directions:
Place a nonstick skillet on the stove over medium-low heat. Assemble sandwiches- spread guacamole on both slices of bread, then top with tomato, bacon and cheeses.  Butter the top of the sandwich and place butter side down in pan.  Press sandwich and cook until golden brown on bottom.  Butter the top of the sandwich and flip.  Cook until golden brown. Repeat.

    Becky, I have these on our menu for this week and can’t wait to try them! I have been trying to remember what I make when I don’t have any energy. Funny how quickly our minds forget! These look so nice for minimal effort- my kind of meal these days! Thanks for sharing this!
