Red, White and Blue Chips and Salsa

I love America! I love celebrating it each year on the 4th of July.   And I love all the good food that goes along with the celebration. There are so many fun red, white and blue dessert ideas out there but this year I wanted to do something savory.  So I thought of these red, white and blue chips and salsa!  It’s super simple too. Blue corn tortilla chips, and Pico de Gallo. All completely natural colors too!  Red tomatoes, white onion and blue corn tortilla chips. This makes for a perfect side dish or appetizer.  And this Pico de Gallo is the best I’ve ever had. It’s the perfect blend of ingredients and a nice squeeze of lime gives it the perfect touch.

Red, White & Blue Chips and Salsa

{Blue Corn Tortila Chips with Pico de Gallo}

Ingredients:

4 tomatoes, seeded and chopped
3/4 cup onion chopped, white or sweet variety
1/2 cup cilantro, chopped
1 jalapeno pepper, seeded and chopped
1 tablespoon fresh lime juice
1 clove garlic, minced (optional)
kosher salt and fresh ground pepper to taste

Directions:
Mix all ingredients in a medium size bowl.  (This tastes best if made at least an hour before serving.) Serve with blue corn tortilla chips.
