Gender Reveal Cupcakes

These cupcakes are so adorable and so fun!  I had so much fun last month filling a cupcake for the first time when I made my Pinch-Me-Not Cupcakes, that I started thinking of other ideas where a surprise center would be fun. I thought up these Gender Reveal Cupcakes but I had no reason to make them since I just had my baby 4 months ago. I decided I would just make them anyway for a family party.  Both my sister-in-law and sister are pregnant, one with a boy and one with a girl and it was so funny when at the party they both randomly picked the right color of cupcake!

Gender Reveal Cupcakes

I was so happy these turned out so adorable and yummy!  And the best part is they are super simple to make. I figured when the big day comes to find out the gender you don’t want to spend all day in the kitchen.

I just used a cake mix, made a quick but yummy creamy filling and made vanilla buttercream frosting.  You can use whatever type of cake you want. Chocolate would be another great option and I have instructions included in the recipe on how to make the vanilla frosting into chocolate frosting if you’d like.

So here are 2 quick ways to get these ready for surprising family and friends.

1- You can make these ahead of time and just fill half with blue and half with pink. Then just use the cupcakes with the correct color to reveal the surprise once you know the gender. Just make sure you remember which have blue and which have pink!

2- Make the cupcakes, cream filling and vanilla frosting ahead of time. Make sure to have the cones already cut out the center of the cupcakes beforehand. Once you know the gender, color the cream filling pink or blue and fill and frost!

Filling these cupcakes is super simple and can be done in 4 easy steps. Once the cupcakes are cool follow these steps:
1- Using a paring knife cut out a cone shape in the middle.
2- Cut off the bottom of the small piece you have removed.
3- Fill the cupcake. I did this by using a small spoon and holding it 1/2 an inch over the hole and let it drop.
4- Cover the hole with the piece of cupcake and frost!

Gender Reveal Cupcakes

Ingredients:
Cupcakes (18-24) (I used a white cake mix)
Cream Filling:
1/4 cup butter, softened
1/4 cup shortening
2 cups powdered sugar
pinch of salt
3 tablespoons milk
1 teaspoon vanilla extract
Vanilla Buttercream Frosting:
2 sticks unsalted butter, softened
1 tablespoon vanilla extract
4 cups powdered sugar
pinch of salt
2 tablespoons milk

Directions:
To make cream filling:
Beat butter and shortening until smooth.  Blend in the powdered sugar and salt.  Gradually beat in the milk and vanilla. Beat until light and fluffy. Color the filling pink or blue or you can do half and half to be able to make the cupcakes ahead of time. Fill each cupcake with the filling using the cone method. (See picture above.)

To make frosting:
In a *stand mixer fitted with the whisk attachment, beat the butter at medium-high speed until smooth, about 20 seconds. Add in the vanilla extract. Beat mixture at medium-high speed to combine, about 15 seconds.

Add powdered sugar and salt; beat at medium-low speed until most of the sugar is moistened, about 1 minute. Scrape down the bowl and beat at medium speed until mixture is fully incorporated, about 30 seconds; scrape bowl, add the milk, and beat at medium speed until incorporated, about 20 seconds, then increase speed to medium-high and beat until light and fluffy, about 4 minutes, scraping down bowl once or twice. If frosting is too thick add 1 tablespoon of milk at a time until desired consistency is reached.

Frost cupcakes by using a pastry bag fitted with your favorite tip or place frosting inside a zip lock bag and cut out a small corner and frost.

*If you don’t have a stand mixer just use a hand mixer.
*Note: If you want to make chocolate buttercream frosting just add 1/2 a cup of cocoa powder. Cream it with the butter.

    I had a friend try to dye cake, it came out brown and nobody understood that it was supposed to be pink! (Turns out she ended up having a boy anyway!). But the frosting in the middle is so obvious and cute. I love it!
