This recipe is a fabulous find from Pinterest. It was so quick to put together. It’s very similar to potato skins but so much faster to make and I actually liked this better. I loved the crispiness of the potatoes and of course the amazing taste the cheese and bacon brought to it. You could even dip these in sour cream. You could serve these either as a side-dish or an appetizer.
