Jack-O’-Lantern Brownies

Jack-O-Lantern BrowniesHalloween time is my favorite time of year to bake!  There are so many cute things you can make.  This idea is really simple and fun.  Kids will love it! I made these the other day with my brother and sister-in-law. It was super quick and lots of fun. And of course so good!

Jack-O-Lantern BrowniesAll you do is take my brownie tip from yesterday.  Just bake a brownie mix in a 9 x 13 pan using parchment paper. once brownies are cool take your desired cookie cutter and cut out as many shapes as you can. I used pumpkins because you can be creative in decorating.

Jack-O-Lantern BrowniesPlace brownies on a plate. Make peanut butter frosting, I added a little orange food coloring since they are pumpkins. Frost and decorate!  We used chocolate chips to decorate.  These are super fun to make and fun to share as well!  This would also be fun to do anytime of year.

Brownie Cut-Outs with Peanut Butter Cream Cheese Frosting
Idea and frosting recipe adapted from Kitchen Runway
Ingredients:
Brownie Mix
4 oz. light cream cheese
1/4 cup creamy peanut butter
1 cup powdered sugar
chocolate chips

Directions:
Mix brownie mix according to directions.  Line a 9 x 13 pan with parchment paper and bake brownies according to directions. Let cool.  Meanwhile make frosting.

Mix cream cheese and peanut butter together until smooth. Slowly add in the powdered sugar.
(Optional: if making pumpkins add a little bit of orange food coloring.)

Once brownies are cool, remove parchment paper/brownies from pan.  Take desired cookie cutter and cut out as many shapes as possible from the brownies.  Have each person frost the brownies with the frosting and decorate with the chocolate chips.
