Summer Refrigerator Pickles

Summer Refrigerator PicklesI love pickles! I only became a fan 2 years ago but I am sure glad I did.  I first made these pickles last summer and it was a hit with everyone who tried it.  My father-in-law was really excited I made them because he told me that growing up his father would always have these in the fridge.  His father and mother would love to eat it like popcorn.  He said that his dad would keep the pickles in a cool whip container. His father passed away last year and so I thought it would be sweet to make him these summer refrigerator pickles and place them in a cool whip container for him to have this Father’s Day.  He was very touched by it and it made me really happy.

These are so simple to make and last for up to 3 weeks in the fridge.  You can adjust the different ingredients according to how you like it.  I usually keep these in a mason jar but really any container will work.

Summer Refrigerator Pickles
Recipe very slightly adapted from One Lovely Life
Ingredients:
1 large cucumber, sliced
about 1/2 cup vinegar
2 tablespoons-1/4 cup water
2 tablespoons sugar
pinch of salt and pepper
Directions:
Slice cucumber and place slices in a container with a lid. Add vinegar, 2 tablespoons water, 2 tablespoons sugar, and salt and pepper. Place lid on TIGHTLY. Shake until well combined. Taste test the liquid and add more sugar, water, or vinegar to taste.
Refrigerate at least 1-2 hours minimum, but longer for a more developed taste.

    They served a lot of foods like this as side dishes is Dan’s mission. They do it with all sorts of vegetables and top it off with sour cream and Hungarian paprika. They’d call this particular one cucumber salad. Dan doesn’t like vinegar, but it was fun for me to try.

    Thanks for sharing that story! Merlin always keeps these in his fridge too, but I didn’t know about the Cool Whip container. I love your blog! Thanks for sharing! 🙂
