Whole-Wheat Biscuits

Whole Wheat BiscuitsA couple weeks ago I read about a lady who loves to cook and she wanted to be healthier and realized she could easily do that through her cooking.  She said she still eats the same types of foods she loves just makes them healthier.  One example she mentioned was how she loves biscuits and started making whole-wheat biscuits.  I had never heard of whole-wheat biscuits and was hesitant to try it but decided I should try it then see what I thought.

I found this recipe for whole-wheat biscuits on foodnetwork.com.  Which by the way was a 5 star recipe.  If you haven’t noticed yet I love their 5 star recipes.  Anyway, I read all the reviews and made a few changes to the recipe making it even healthier.  I made the biscuits and was excited to see how they would turn out.  When they came out looking beautiful out of the oven I was really excited!  And it tasted really good too. I am so glad I gave these a chance. For now on if  I ever make biscuits I will make these ones. I have a yummy recipe coming tomorrow using these biscuits.

If you have a food processor you can use that to make the biscuits.

Whole-Wheat Biscuits
Recipe adapted from Food Network
Ingredients:
1 cup whole-wheat flour or whole-wheat pastry flour
1 cup all-purpose flour
1 tablespoon baking powder
½ teaspoon baking soda
2 teaspoons sugar
½ teaspoon salt
6 tablespoons unsalted butter, cold, cut into pieces
¾ cup buttermilk, cold
Directions:
Preheat oven to 450 degrees F.
In a large bowl whisk flours, baking powder, baking soda, sugar, and salt.  Cut in butter until mixture resembles coarse meal. Add buttermilk to dry ingredients, stirring until dry ingredients are moistened.  Turn dough out onto a lightly floured surface and fold the dough into itself 4 to 5 times.  Roll or pat dough out to about 1-inch thickness.  Cut with a biscuit cutter and place on an ungreased baking sheet.  Brush the tops with milk.  Bake for about 12 to 14 minutes or until brown.

    I love whole wheat biscuits. Do you know what you could do to make them even healthier? This is what I do. I use 2 cups whole wheat, 4 T butter, omit the sugar, and use skim milk. I also like to add cinnamon, usually about 1/2 tsp. It makes them smell so good! Then, to make them extra fluffy without all that butter, I roll mine. I take my batter after all mixed, then roll it to about 1/2 inch or so. Lightly flour the surface and then fold the dough in half on itself. Roll out again and repeat this about 4-6 times. Make sure you lightly flour the dough because this creates the “layers” when baking. You’ll be so surprised when your biscuits come out it’s awesome! If you want, I can send you pictures.
