I’ve had a lot of chicken enchiladas in my life but I have to say these ones are my favorite. My mom made these all the time when I was younger and it was my favorite. Now I make these all the time and Derek loves it. After Levi was born my neighbor brought us these enchiladas and they were so good. She made them with the uncooked tortillas they sell at the grocery store. They cook up really fast and taste so amazing. I highly recommend those tortillas but I make them often with regular tortillas and it’s still so good!
Chicken Enchiladas
Ingredients
2 chicken breast, cooked
1 can cream of chicken
8 oz. sour cream
1 (4 oz.) can chopped green chilies
green onions
grated cheddar cheese
flour tortillas
Directions
Preheat oven to 350 F. Mix cream of chicken, sour cream, green chili and green onions. Grease a 9 x 13 pan and spread a small amount of the creamy mixture on the bottom. Cube cooked chicken and mix with small amount of creamy mixture. Spoon the creamy chicken mixture in the tortillas. Fold up and place seam down in pan. Cover the enchiladas with the rest of the creamy mixture. Cover with cheese. Bake at 350 F for about 30 minutes.
I want to try this one! I like that most of the ingredients I already have on hand. I don’t like trying recipes that I have to buy a lot of special ingredients for, especially when there’s some left over that I don’t know what to do with.
So I made these last night for dinner and the hubby loved them!
