Derek’s mom found this in a magazine quite a few years ago and we had it for dinner the other day. I wasn’t sure how it’d turn out since I haven’t tried plum jam before. So when we sat down for dinner and started eating I was surprised by how good it was! I loved it and had seconds. It’s so simple to make yet has a great flavor to it. I can’t wait to have it again.
Peking Pineapple Ham
Ingredients:
1 can (1 lb. 4 oz) Pineapple chunks
2 cups diced cooked ham
2 tablespoons butter
1/2 cup plum jam
1/4 teaspoon ground ginger
1 cup sliced celery
1/4 cup sliced green onions
Hot fluffy rice
Directions
Drain pineapple, reserving 1/4 cup juice. In medium-size skillet, saute ham in butter until lightly browned. Add pineapple juice and plum jam; blend well. Sprinkle with ginger. Cook until mixture coats and glazes ham. Stir in pineapple chunks, celery and onions, tossing until heated through. Serve over hot fluffy rice.
A while back, Michael and I tried something that had a plum-style sauce on it and I wonder if plum jam would do the trick when mixed with other things. I’m going to have to check it out!
