This cake is amazing! It’s a family favorite for Derek’s family and it is often requested for birthday parties. Just thinking about this cake right now is really making me crave it. I love the lemon flavor and the texture of the cake.
Derek requested this cake for his birthday party as he does every year. He likes cake but can’t eat too much of it because cake is usually so sweet. That is why he loves this cake so much. He can eat a slice of it without feeling like he ate way too much sugar. I can’t wait to have this cake again. It’s so tasty and everyone loves it.
Ingredients:
1 yellow cake mix
1 (3.4) oz package instant vanilla pudding
4 eggs
1 cup sour cream
½ cup water
1 stick butter, melted
1 tsp lemon extract
¼ cup poppy seeds
Glaze:
1 cup powdered sugar
1 tablespooon milk
½ teaspoon vanilla extract
1 teaspoon lemon juice
Directions:
Preheat oven to 350 F. Grease and flour bundt cake pan. Mix together all ingredients except poppy seeds; mix until well combined and then mix in the poppy seeds. Pour into bundt cake pan. Bake for 45 minutes. Remove from oven and cool on wire rack. Do not remove from pan until cool. Gently loosen cake from pan with knife and invert onto wire rack to cool completely. Place cake on serving plate.
For Glaze:
Mix together the milk, vanilla extract and lemon juice. Add the powdered sugar and mix with a hand mixer until combined. Drizzle over the cake.
