Yesterday was Derek’s birthday. We had lots of fun celebrating it last night. For dinner he requested Buffalo Chicken Crescent Puffs. The first time I made it was a surprise for him. He had been gone all day at school and work and was coming home late from an exam. It was a yummy surprise! He loved it and appreciated my little surprise.
This recipe is one from a Pillsbury Bake-Off. I changed quite a few things about the recipe to make it more to our liking. It had way too much cream cheese in it and I’m not a big fan on bleu cheese so I added pepper jack, one of Derek’s favorites. This can be dinner or a snack.
Buffalo Chicken Crescent Puffs

6 oz cream cheese, softened
2-3 tablespoons buffalo wing sauce
3/4 cup pepper jack cheese (or a milder cheese like mozzarella)
1 cup finely chopped cooked chicken breast
1 can refrigerated crescent rolls
2 tablespoons butter, melted
¼ cup Panko bread crumbs
Directions
Preheat oven to 350 F. In a medium sized bowl mix together the cream cheese and buffalo sauce until smooth. Mix in the cheese and chicken. Open up the can of crescent rolls and separate the rolls. Place a small amount of chicken mix in center of rectangular dough. Wrap dough around chicken mixture and press sides together. Place on baking sheet.
Brush melted butter over the top and sprinkle on the panko crumbs.
