Chunky Twix Cookies

Chunky Twix Cookies

My sister-in-law’s birthday is this Saturday and she loves Twix candy bars so I surprised her with these incredible cookies last night.   I wasn’t quite sure how cookies would taste with Twix’s in them but oh boy! It was so good!  It adds a crunch to it, along with oozing caramel and of course chocolate!  My sister-in-law, Janelle or as we call her, Nellie, loved it!  We all did.  Also, these are the softest cookies I’ve ever made.

The recipe calls for 2 cups of chopped up Twix’s, that’s about 2 packages of the fun size candy bars. (16 little bars) You can use a little less Twix and add chocolate chips too if you’d like.

Chunky Twix Cookies
Ingredients:

 2 cups plus 2 tbsp all-purpose flour
½ tsp. baking soda
½ tsp. salt
12 tbsp. unsalted butter, melted and cooled until warm
1 cup packed brown sugar
½ cup granulated sugar
1 large egg plus 1 egg yolk
2 tsp. vanilla extract
2 cups coarsely chopped Twix bars
*optional: 1/2-3/4 cup chocolate chips
Directions:
Preheat oven to 325°F. Coarsely chop the Twix bars (about 1/4-inch chunks).  In a medium bowl, whisk together the flour, baking soda and salt; set aside. In the bowl of an electric mixer (a hand mixer works just fine too), mix butter and sugars until thoroughly combined. Beat in egg, yolk, and vanilla until combined. Add dry ingredients to the sugar mixture and beat at low-speed just until combined. Gently stir in the Twix chunks and chocolate chips.
Roll a scant half-cup of dough into a ball. Holding dough ball in fingertips of both hands, pull apart into two equal halves. Rotate halves 90 degrees and, with jagged surfaces facing up, place formed dough onto cookie sheet, leaving ample room between each ball. Bake, reversing position of cookie sheets halfway through baking, until cookies are light golden brown and outer edges start to harden yet centers are still soft and puffy (approximately 11-13 minutes). Do not overbake. Allow the cookies to cool completely on the baking sheet.
*Sometimes I add less Twix and add more chocolate chips. It just depends how many Twix bars I have on hand.
(I’ve found to help these from spreading too much, right before baking stick the cookie sheet with the cookies ready to be baked on it in the freezer for about 5 minutes.)

    Have you ever been to Over the Top in South Jordan? It’s over by Cafe Rio. They have cookies with all sorts of candy bar variations. You should check it out!
