I love Mexican food and grew up eating it a lot. My grandparents on my mom’s side are from Mexico and so my mom loves Mexican food. She makes some really good food, so often I’m not impressed by Mexican restaurants. I guess too much of it has been Americanized although it’s not to say there aren’t good Mexican restaurants out there.
Quite a few months ago I went out to eat at a Mexican Restaurant and ordered the street tacos. It was so good! I wanted to find a recipe to make it on my own. I never did find what I was looking for so I made one up.
These tacos are so good. I’ve made them quite a few time for parties and it’s always a hit! The hardest part is keeping the tortillas and chicken warm when it’s time to serve so I suggest first preparing the toppings then cook the chicken and warm up the tortillas. Also remember to always read through recipes before making them. I highly suggest marinating the chicken overnight.
Directions:
In a freezer zip lock bag add the olive oil, lemon juice, chili powder, salt and pepper. Add the chicken breasts and seal the bag closed. Shake the bag until the marinade is evenly distributed. Place in fridge and marinate overnight or at least for a few hours
Prepare all toppings and set aside.
Preheat oven to 425 degrees and place chicken on baking sheet lined with foil and sprayed with non-stick cooking spray. Bake until cooked through. Cut chicken into small strips and keep warm.
To warm up tortillas place 6 tortillas at a time on baking sheet. Lightly spray with non-stick cooking spray and sprinkle on a little kosher salt (or regular salt) Bake in oven at 400 degrees until soft, about 3 minutes. Repeat until all tortillas are warmed. Make sure to keep the soft tortillas warm until serving.
Have each person assemble their own taco and enjoy!
