Pillow Cookies

Pillow CookiesThis recipe is a chocolate lover’s delight! Get this, it’s not just a cookie but a BROWNIE too!  So no need to decide if you want a brownie or a cookie, you can have both in one bite. YUM!  The second I saw these cookies on Bakerella I couldn’t wait to try them!  But I didn’t want to make them for only the 2 of us so I waited until I had more people to share with.

Yesterday, my 3 best friends from high school and me all got together and we had an amazing lunch (recipes from that to come later) and then we made these cookies together.  It was a hit!  They all loved it and after when I shared it with Derek and my in-laws they all were amazed by them too.

The middle of the cookie is pure heaven.

It’s not healthy at all but you have to try these cookies at least once in your life!  Trust me, you will be amazed.  Your friends and family will love you too!

Pillow Cookies
Adapted from Bakerella’s Brownie Pillow Cookies

*Note- I highly recommend making both the brownies and the cookie dough the day before. It gives the brownies plenty of time to cool and the cookie dough the time it needs to be more workable.

1 package brownie mix
1 cup butter, room temperature
1 1/2 cups packed light brown sugar
2 large eggs, plus 1 egg yolk
1 tablespoon vanilla
2 1/2 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
12 oz. bag miniature semi-sweet chocolate chips
Directions:
Make brownies according to package and let cool. Cut half of brownies into small squares.
For the chocolate chip cookie dough, beat butter with a mixer until creamy.  Add brown sugar and beat until smooth.  Add eggs, yolk and vanilla. Beat until smooth.  Combine flour, baking powder, soda and salt in a medium bowl and stir together with a wire whisk.  Add flour to butter mixture and beat until combined. Stir in mini chips.
Let dough chill covered in the refrigerator overnight, or for a few hours.
Preheat oven to 350 degrees.
Spray your cookie sheet with non-stick spray or place parchment paper on the cookie sheet.  Take a medium amount of cookie dough and make it into a ball in your hands.  With your thumb make an indentation in the middle then place the small brownie piece inside.  Work the cookie dough around the brownie then flatten slightly and place on cookie sheet.
Bake at 350 degrees for about 10 minutes. But remember cooking time will vary depending on cookie size and oven.
Cool on the baking sheet for a few minutes and then cool completely on a wire rack.
Then enjoy the most amazing cookie ever!
