No Bake Toffee Energy Bites- A quick and easy recipe that is filled with healthy ingredients that will give you the energy boost you need! The perfect snack for those busy days.
Energy Bites are one of my favorite go-to snacks! So many of you love my recipe for No Bake Monster Cookie Energy Bites I decided to make another energy bite recipe for you. This time with toffee. I love the additional crunch and slight sweetness that it adds. It also satisfies my sweet cravings in a much healthier way!
I think that energy bites are pretty much the best snack ever! My life is so busy right now with 4 kids. So many times when I’m hungry I don’t get to eat when I need to because the baby needs to nurse or my toddler needs help with something. And since I’m nursing I get hungry often! So I need healthy and quick snacks. Now that I have a batch of these No Bake Toffee Energy Bites in my fridge when I am hungry but too busy to sit down and eat I just grab one or two and it gives me the energy I need to keep going! These seriously live up to their name. It might sound silly but these really do almost instantly give me energy after I eat it! It’s so awesome!
These energy bites are filled with my favorite healthy energy boosting ingredients! I used Bob’s Red Mill because I love their products and the quality and freshness of them. They also have a lot of great products that are gluten free, vegan and paleo.

Isn’t this a pretty sight!? I love how quick and easy this recipe is! All you do is add all the ingredients to the bowl, stir, chill and roll into balls. It’s that easy to make a delicious and healthy snack!
I used toffee bits in this recipe but feel free to add the chocolate toffee bits or even buy the toffee candy bars and chop it. Whatever you prefer! I added dark chocolate chips in this recipe since I love dark chocolate and it’s healthier for you! But again feel free to change it up if you prefer.
Bites of heaven!
- ½ cup creamy Peanut Butter
- ⅓ cup honey
- 1 teaspoon vanilla extract
- 1 cup old fashioned oats
- ⅓ cup ground flax seed
- ⅓ cup shredded coconut (or coconut flakes)
- 1 tablespoon chia seeds
- (optional) 1 tablespoon wheat germ
- ⅓ cup dark chocolate chips (or ¼ mini)
- ⅓ cup toffee bits
- Mix all ingredients together in a large bowl. Refrigerate for 15-30 minutes then roll into balls. Keep energy bites stored in an air tight container in the fridge or freezer.
