Hi all! I’m excited to be here today and share this delicious recipe – Caramel Chocolate Chip Cookies! I took my favorite chocolate chip cookie recipe and added some fun pieces of caramel. I don’t know about you but I hate counting out the number of caramels when I buy them for a recipe so I usually end up having some left over. I figured this would be the perfect way to use them and they were delicious!
A little tidbit I’ve picked up in the last couple of years is that if you have some leftover and you want to put them in the cookie jar, put a piece of bread in with it. The bread will absorb the moisture and your cookies will be as soft as the day you baked them!
- 1 c butter, softened
- ½ c sugar
- ¾ c brown sugar, packed
- 2 tsp vanilla
- 1 egg
- 2¼ c flour
- 1 tsp baking soda
- ½ tsp salt
- 2 c milk chocolate chips
- 10-15 caramel squares, cut in pieces
- Preheat oven to 375 F.
- In a large mixing bowl, cream butter and sugars together until light and fluffy.
- Add the vanilla and egg and beat well.
- In a small mixing bowl, stir flour, baking soda and salt.
- Combine dry ingredients with creamed mixture and mix well.
- Add the chocolate chips and caramel pieces.
- Roll heaping tablespoon of dough into a ball.
- Bake for 8-10 minutes.
