I love these enchiladas! They are beyond super quick and so good! It seriously only takes 3 minutes from start to finish! My mom would make these for me all the time when I was younger. (And still sometimes when I’m over.) It’s crazy awesome how fast it is to make these! It takes no time at to assemble them and you cook it up in the microwave.
First you soften the corn tortillas in the microwave by wrapping them in damp paper towels.
Then you roll it up and top it with a little more enchilada sauce and cheese. Then after 1 minute in the microwave it’s ready!
- 2 corn tortillas
- about ¼ cup enchilada sauce
- about ⅓ cup cheese
- To soften tortillas, place them between a damp paper towel and microwave for 30 seconds. Remove tortillas and place on a plate. Spread enchilada sauce on the tortillas and place a small amount of cheese down the middle. Roll up the tortilla and place it seam side down on the plate. Place the 2 enchiladas together and top with enchilada sauce and cheese. Microwave for 1 minute and enjoy!
