Levi, my toddler, is a picky little guy. He loves eating ice which is fun but has no nutritional value so I thought up a fun and healthy idea for him to still enjoy “ice.” We call it, “Pink Ice.” He thinks it is so cool! It’s just strawberry yogurt plus finely grated carrots.
The possibilities of what you can do with this idea are endless! You can use any type of yogurt and mix in whatever you want. You could add in more fruit or other vegetables you think would work. I know carrots and yogurt might seem like an odd combination but it really works well together! I eat this with him and I really like it too. And because the yogurt is frozen you don’t even notice the texture of the finely grated carrots. It’s super awesome and makes me happy to see my son eating more vegetables.
Then I spread it out, freeze it, cut it into squares and serve it!
