I don’t like maple syrup very much and so when we had pancakes the other day I decided to make buttermilk syrup. It’s super easy to make plus fun too. It’s fun to watch the color change to a caramel texture. I love the taste of it. It goes great with pancakes, German pancakes, waffles etc. It’s honestly more like caramel than syrup but hey that’s just fine with me!
- 1½ cups sugar
- ¾ cup buttermilk (or scant ¾ milk + scant 1 Tbsp. vinegar or lemon juice, let sit for 5 minutes)
- ½ cup butter
- 2 Tbsp. corn syrup
- 1 teaspoon baking soda
- 2 teaspoons vanilla extract
- In a large sauce pan combine all ingredients except the vanilla extract; bring to a boil. Boil for 7 minutes. Remove from heat; stir in vanilla.
